Step 1: Prep the Chuck Roast
Remove the chuck roast from the fridge and pat dry with paper towels.Lightly coat the roast with olive oil to help the seasoning stick.Mix all dry rub ingredients and apply generously to all sides of the meat.Let it rest at room temperature for 30–45 minutes before smoking.Step 2: Preheat Your Smoker
Preheat your smoker to 250°F (121°C).Use hickory, oak, or mesquite wood for a bold smoke flavor, or apple/cherry wood for a milder, sweeter taste.
