Oven Method
Preheat OvenSet your oven to 325°F (165°C).Season the MeatPat the chuck roast dry with paper towels. Generously season both sides with salt and black pepper.Sear the RoastHeat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until a brown crust forms, about 4–5 minutes per side. This step adds deep flavor.Add AromaticsRemove the roast and sauté onions and garlic in the same pot for 2–3 minutes.Deglaze the PotPour in red wine (or broth) and scrape up any browned bits from the bottom—this is pure flavor.Add Vegetables and BrothReturn the roast to the pot, add carrots, potatoes, celery, herbs, bay leaves, and beef broth.Cover and RoastCover tightly with a lid and place in the oven. Cook for 3–4 hours or until the meat is fork-tender and easily pulls apart.Rest and ServeRemove from oven and let rest for 10–15 minutes. Slice or shred, then serve with the cooked vegetables and broth spooned on top.
